Abstract: Over the last couple of decades, there has been a growing interest in the social and health impacts of food deserts. Simply defined, a food desert is a geographic area where people have limited access to affordable and nutritious food due to there being few or no grocery stores, supermarkets, or other sources of healthy food within a reasonable distance. This paper uses geospatial software, census data, and supermarket locations to explore the development and impact of food deserts in Denver, Colorado from 1990 to 2020.
